Whipped up a filling and healthy meal for my family this morning. Jayden came over for breakfast too. I made my own mash potato with simple seasonings like salt and pepper. I was pretty skeptical about how salt and pepper can even produce any great taste when I first saw the recipe but I don't have much choice as I don't have the time to make gravy for my mash potato. To my surprise, it tastes so so good! 



Mash Potatoes with Salt and Pepper
Serves 4 to 5 pax

Ingredients:
2 Russets Potatoes
Finely grounded black pepper
A pinch of salt
2 to 3 tablespoons of fresh milk
(You can add more fresh milk for creamier mash potatoes)

Instructions:
1. Wash the potatoes with water and peel the skin off.
2. Chop the potatoes into smaller pieces and set it to boil for 10min approximately, or until
it can be mashed easily with a fork. The smaller the pieces of potatoes, the faster it softens.
3. Get the potatoes out and start mashing them.
4. Add fresh milk and continue to mix.
5. Add a pinch of salt and continue to mix.
6. Add a few pinches of finely grounded black pepper, each time you mix the mash potato.

Serve while it's still hot!




My breakfast comes with two different types of sandwiches - Foccacia Bread and Croissant - mainly because the bakeries do not have enough Croissants for my whole family and so I got Foccacia as a substitute. One thing about my family is that we must have cocktail sausages and honey baked ham on our plate for breakfast. I don't have a toaster at home so instead of toasting my breads, I heat them up on my frying pan under small heat for a few seconds. Turns out perfectly fine!




Savoury Omelette with Cherry Tomatoes, Capsicum and Cheese
Serves one

Ingredients:
2 Eggs
2 cherry tomatoes chopped into quarters along the length
Diced capsicum (depending on how much you want to taste them in your omelette)
Half a piece of Kraft's Singles Cheese, shredded into smaller bits.
1.5 tablespoon of fresh milk

Instructions:
Beat the egg and pour in the fresh milk.
Pour in all ingredients and mix with a fork.
Fry them in a pan and you're done!

I prefer my omelette to be slightly runny. Before it's fully cooked, I would have already transferred it to my plate.




Since it's the holidays, I feel that I am obliged to make a decent breakfast for my family. Alright, I have to admit that I am also in the mood to make breakfast. I love preparing breakfasts and frankly speaking, I am only capable of preparing western or italian food. I love chinese cuisine but I just can't seem to cook them well. So, I think I'll stick to making western food for the time being.

I have been drinking fresh orange juice from SPH's cafeteria daily.
Keeps me awake and makes me feel healthier.
